Cabernet Sauvignon is the most widely planted red wine grape variety globally and serves as a "cornerstone" of Chinese wine grapes. With thick skins, high tannin content, and moderate acidity, it imparts a deep ruby color and intense blackcurrant and blackberry aromas to wines, often accompanied by vegetal notes of green pepper and cedar. In China, Cabernet Sauvignon is extensively planted in Yantai, Shandong; the eastern foothills of Helan Mountain in Ningxia; the northern foothills of Tianshan in Xinjiang; and Huailai, Hebei. Yantai's Cabernet Sauvignon, influenced by a maritime climate, produces wines with a softer body and fresh fruit aromas. In contrast, Ningxia's wines, due to significant diurnal temperature variations, exhibit firm tannins and strong aging potential. Cabernet Sauvignon was first introduced to Yantai by Changyu Wine Company in 1892.
